Hickory's Model 9 is ideal for large sized food establishments. Hickory's unique, rotating spit method of barbecuing yields an evenly cooked, self-basted, moist, and tender product, in a way that "lazy-susans" and standard trays cannot. Hickory's barbecue ovens, with their stainless steel construction, have developed a reputation throughout the food industry for profitability, reliability, merchandising capability, and long service life. The small frame of the Model 9 and large merchandising area provide limitless profit opportunities. The unit features 9 spits with a capacity of 45 chickens per hour.

Cooking: All of Hickory's vertical rotisseries offer the choice of "batch" or "continuous cook" roasting. In batch cooking, the unit is loaded from bottom to top, and then unloaded from top to bottom, providing the lowest spit with the most cooking time.

Hickory's "continuous cook" process is the most reliable method to deliver freshly cooked product to the consumer. The spits are loaded from top to bottom. Since heat's natural tendency is to rise, the top spit finishes cooking first and is removed. Each successive spit is then moved upwards one position, and an uncooked spit is added to the bottom of the rotisserie. The retailer can now deliver freshly cooked and delicious product to each customer, because the "continuous cook" methodology allows the rotisserie's production to correspond to demand.

Merchandising: Hickory's gas-fired rotisseries feature uniquely designed ceramic radiants which yield a truer barbecue appearance and taste. The self-merchandising, eye-catching display of rotating and roasting product is visible through large glass doors, and stimulates consumer appetites to generate increased impulse sales. The large glass face of the Model 9 makes it an excellent merchandising tool and features single-sided merchandising for "against-the-wall" placement.

Ventilation: Electric units do not normally require air evacuation. However since the surrounding environment may get hot, a hood may be useful. Gas units must be vented, either under a hood or directly vented via a flue. If flue chimneys are required, please specify in advance. Nominal flue diameter is 9".
Drive Mechanism: Gear reduction - Motor worm drives fiber gear on base of shaft, shaft has individual worm gears which drive the spits. Drives are located on control side.
Installation Requirements: Licensed electrician, licensed gas fitter for all gas connections and checkout. HVAC specialist for air evacuation. Placement of this machine is critical since it is hot. Plan carefully.
Front Facings: Machine is made with high grade polished stainless. No screw fittings appear on the front facing. For an additional charge, facings can be painted to desired color with brass trim.
Service, Maintenance, and Construction: All panels, accessing fat collection areas, are made from high grade, acid resistant, stainless steel. The unit employs few moving parts which reduces the possibility of breakdowns. Angle iron construction ensures a durable long life. Motor and gear drives are easily accessible. Unit is on casters for ease of movement when clean up is required. Unit is fully plumbed and requires a single gas connection. No oiling or greasing is required for any part.
Safety: All burners are actuated by safety pilots and manifolds. Large drip drawers below the heat source prevents fat fires. Frontal glass reduces worker exposure to excess heat. Individual controls to control each burner, motor, and lamp.
